Met Rueben for lunch today at Cowboy Star in University Village. This Restaurant and Butcher Shop is the first restaurant in Colorado Springs to serve up a unique Neighborhood Fine Dining experience by combining contemporary American cuisine with a western flare. I hear the steaks are awesome here, but since I was pressed for time I selected the Rueben and they were able to get me back on my way inside of thirty minutes as promised.
