A post-Christmas Chimi at one of Colorado Springs newest local Mexican restaurants at Powers and Briargate. When I walked in I thought this place looked a little familiar to me. The building originally housed a Chili's Restaurant, followed by Carlos Miguel's Mexican Restaurant which recently closed (just this location) in November. The Love Local Challenge of visiting at least one local business a week continues. Our Christmas shopping spree this year took us to these fine local establishments and more, and we discovered some great deals and unique gift ideas in the process.

Celebrating the Winter Solstice. It’s officially the first day of winter, but it’s also the beginning of longer days! Tonight I tried the Baltic, which consists of tuna salad, cornichon, egg, onion, and lemon aioli on a slice of flat light rye bread served with veggie chips. The Strawberry Snow Bunny, bottled right here in the mountains of Colorado by our friends at Evergood Elixirs was very refreshing, and the Peppermint Gelato made for a nice finish. Thanks to Patrick for awesome service! Enjoy the taste of Venezuela as prepared by the amazing Chef Carlos at this cozy cafe directly next to the main restaurant at 1755 S. 8th Street. Enjoy FREE WiFi during your visit. The Arepa is a delicious grilled pocket and is stuffed with a variety of fresh ingredients. Mine was packed full of shredded beef and cheese. Others were getting smoothies made with fresh fruit and a delightful looking dish made with plantains. Another culinary adventure with Mandy and the gang found us enjoying some awesome Italian food and fun table talk at Luigi’s Italian Restaurant on South Tejon. They’ve been serving Colorado Springs for 60 years! The fresh baked bread right out of the oven was amazing and my lasagna, a traditional Luigi’s favorite, was SO tender and delicious!
Stopped by for a real meal deal during the Boyle Lunch Bunch special today. The chicken is totally awesome and included two sides PLUS a waffle or roll for just $5. We saw Jim from Billy’s Pizza and Carlos and Maria from La Cava and met Al himself as he greeted customers in the dining area. Al’s is located in the Citadel Crossing Shopping Center between Galley and Platte at 721 N. Academy.

The gang and I are looking forward to joining The Restaurant Show’s Mike Boyle for a Boyle Supper Club at La Cava Mexican Restaurant this evening from 4:00pm - 7:00pm, where YOU too can get some fantastic Mexican cuisine at some awesome prices during this special event where everyone is invited. Stop #3 on my Love Local Challenge shopping spree found me in the Santa Fe Springs gift and souvenir store in Old Colorado City. This place is literally packed full of some awesome gift selections and stocking stuffers. My nose caught a whiff of something wonderful and it didn’t take me long to find this Finch Berry soap display from where some wonderfully pleasing aromas were making their way through the store. This locally-owned store has been there for 24 years. Sadly, this was my first visit, but now you and I both know it’s there, so the next time you’re in Old Colorado City be sure to stop in.
Day one of my Love Local Challenge where I visit at least one new locally owned small business per week. This is stop #2 today and wow, do you ever feel like a kid in a candy store here! I found some great stocking stuffers. Pop Rocks and huge rolls of Smarties, my sister’s favorite! It’s a bit cool today but a great day to get out and do a little exploring. If YOU haven’t already accepted the challenge, why not today? Just visit at least ONE locally owned business a week, take some pics, and then share your finds with your friends and family and encourage them to accept the challenge as well. Remember, just 100 people doing that for one year (52 weeks) and that’s 5,200 visits to our local shops and restaurants. Tell THEM what you’re up to so THEY can get in on the excitement too! UPDATE: This store has permanently closed. Getting off to a great start with the Love Local Challenge with some spectacular Asada Pupusas stuffed with Pueblo chili and cheese. Loving the strawberry lemonade too! This is our first visit and it won’t be our last. Fast, friendly service and free parking too. The restaurant entrance is at the opposite end of the bakery in the same building.
In support of our local small business owners, we would like to challenge YOU to visit at least one new small business a week starting today.
