This evening found us out and about at the Crystal Park Cantina, a unique, home-style Mexican restaurant tucked in the hills above Manitou Springs. 'Twas a Happy Friday indeed for the DiscoverCOS team! We got the weekend “off the ground” at The Airplane Restaurant. Taste buds soared to new heights with a variety of menu items to choose from. Mary suggested the Certified Black Angus Top Sirloin that included a garden salad, choice of potato and sautéed vegetables. DiscoverCOS has gone fishing. If you want to snag a great meal like we did you need to stop in at English Dockside on the west side of Colorado Springs for a real catch! Anthony offered some great suggestions that proved to be excellent choices every time. The fresh hot, flakey rolls with garlic butter literally melted in your mouth. The Fish and Chips were delicious too and included seasoned fries and coleslaw, and the Peach Cobbler that sounded too good to pass up proved to be just that. Our fishing trip turned out to be a worthwhile adventure.

Tonight we enjoyed an evening out at one of Colorado Springs newest restaurants and the sister location of Soda Pops in Eagle River, Wisconsin, featured on TV's "Drive-Ins, Diners and Dairy Bars". Founders Jason and Errol Meinholz have brought the same unique atmosphere, menu with topping station, bottled soda, full bar, and super-premium Wisconsin ice cream to Colorado Springs. Heather greeted us and offered a sample of one of their many flavored sodas. The "topping station" allows you to make your burger as unique as you like. I had the Wisconsin to Colorado Green Chile Cheeseburger, a grilled ⅓ Lb fresh Angus beef patty topped with melted Wisconsin Monterey Jack Cheese infused with roasted Pueblo green chiles. It was delicious and came with a side of house-made chips. The warm apple crisp with a scoop of Wisconsin vanilla ice cream was a perfect ending to a great meal! Stop in and welcome them to the neighborhood.

Friday evening we arrived before 5:00pm and during the middle of a hail storm. The place was packed but immediate seating was available in the bar or upstairs. They have some awesome patios with incredible views, but due to the weather we ended up taking a table inside on the main level. Jill took great care of us and got us started with a round of super thin chips with fresh salsa. The Chipotle Baby Back Ribs were fork tender and absolutely delicious and included a side of rice and beans. A chocolate brownie topped with ice cream was a wonderful way to top off this wonderful evening and incredibly satisfying meal. Additional locations are in Denver, Lakewood, Lone Tree, and Westminster.
